Ingredients:

1 lb (450g) ground beef: You can use lean or regular beef.

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper, chopped (red or green)

Ingredients:

  • 1 lb (450g) ground beef: You can use lean or regular beef.

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 1 bell pepper, chopped (red or green)

  • 1 can (14.5 oz) diced tomatoes

  • 1 can (8 oz) tomato sauce

  • 1 can (6 oz) tomato paste

  • 2 cups beef broth: You can use chicken broth as a substitute.

  • 2 tbsp Worcestershire sauce

  • 2 tbsp soy sauce

  • 2 tsp dried oregano

  • 1 tsp dried basil

  • 1/2 tsp paprika

  • 1/2 tsp ground black pepper

  • 1/4 tsp red pepper flakes (optional, for a bit of heat)

  • 1 cup frozen corn kernels: You can use fresh or canned if preferred.

  • 1 cup cooked black beans: Canned beans work well, just drain and rinse.

  • 12 oz spaghetti: Or any pasta of your choice.

  • Salt, to taste

  • Grated Parmesan cheese (optional, for serving)

  • Fresh parsley (optional, for garnish)

Instructions:

  1. Cook the Beef:

    • In a large skillet or pot, cook the ground beef over medium heat until browned. Break it up into small crumbles as it cooks. Drain excess fat if necessary.
  2. Add Vegetables:

    • Add the Cowboy Spaghetti  diced onion, minced garlic, and chopped bell pepper to the skillet. Cook until the vegetables are softened, about 5 minutes.
  3. Add Tomatoes and Seasonings:

    • Stir in the diced tomatoes, tomato sauce, and tomato paste. Mix well.

    • Pour in the beef broth and stir to combine. Add Worcestershire sauce, soy sauce, dried oregano, basil, paprika, black pepper, and red pepper flakes (if using). Mix thoroughly.

  4. Simmer:

    • Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes, stirring occasionally. This allows the flavors to meld together.
  5. Add Corn and Beans:

    • Stir in the frozen corn and cooked black beans. Simmer for an additional 5 minutes, or until the corn is heated through.
  6. Cook the Spaghetti:

    • While the sauce is simmering, cook the spaghetti according to the package instructions until al dente. Drain the pasta.
  7. Combine and Serve:

    • Add the cooked spaghetti to the Classic Potato Pancakes Recipe sauce, or serve the sauce over the spaghetti. Mix until the pasta is well-coated with the sauce.
  8. Garnish and Serve:

    • Serve hot, optionally topped with grated Parmesan cheese and fresh parsley if desired.

Tips:

  • For added flavor, you can use a bit of smoked paprika or chipotle powder to give the dish a smoky kick.

  • If you prefer a spicier dish, add more red pepper flakes or a splash of hot sauce.

Enjoy your Cowboy Spaghetti a hearty, flavorful dish that brings a bit of the Wild West to your table!
